In a spacious plastic bag designed for resealing, merge the corn flour, corn meal, and Cajun seasoning. Thoroughly mix the contents of the bag to ensure a uniform blend. After draining the potatoes, keep them slightly damp. Introduce the wet potatoes into the plastic bag with the seasoning mixture and vigorously shake to evenly coat the fries.
