- 1 pound dry fettuccine pasta
- 1/2 cup grated Parmesan cheese

Cook the sliced onion, chopped bell pepper, diced celery, and minced garlic in butter until the onions become soft and translucent. Add a spoonful of flour to the skillet and cook for 5-10 minutes, stirring constantly to prevent burning. Introduce the crawfish into the mixture and cover the skillet, allowing it to simmer for 15-20 minutes, stirring periodically.

Next, combine the processed cheese, half-and-half, Cajun spices, and a pinch of cayenne pepper into the skillet. Cover it again and let it simmer for approximately 20 minutes, stirring occasionally.

In a separate pot, bring a large quantity of salted water to a boil. Cook the pasta in boiling water for 8-10 minutes, or until it reaches the desired al dente texture; drain the water.
