Cajun Crawfish Etouffee

  • 2 cups long grain white rice
  • 4 cups water
  • 1/2 cup margarine
  • 1 large onion, chopped
  • 1 medium green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1/2 cup water, or as needed
  • salt and black pepper to taste
  • cayenne pepper to taste
  • 1 pound peeled crawfish tails

Combine the cooked rice and water in a saucepan, then heat it up to a rolling boil. Next, cover the saucepan and lower the heat to a low simmer for 15-20 minutes or until the rice is perfectly cooked and all the water has been absorbed.

During this time, melt the margarine in a large skillet over medium heat. Add the sliced onions and diced bell pepper, stirring occasionally until they're tender and soft, taking around 10-15 minutes. Stir in the minced garlic for just a minute.

Now, mix in the cream of mushroom soup and water to create a rich sauce. Add some seasoning with salt, pepper, and cayenne to taste. Then, stir in the crawfish tails. Cover the skillet again and lower the heat to a low simmer for 15-20 minutes, stirring occasionally. If needed, you can add some water to thin the sauce as desired.
