Cajun Crab Au Gratin
Ingredients
  • 2 egg yolks
  • 12 fluid ounces heavy cream
  • 1/4 cup butter
  • 1 large yellow onion, minced
  • 1 stalk celery, minced
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Creole seasoning
  • 1/4 cup all-purpose flour
  • 1/2 cup shredded Cheddar cheese
  • 1/2 cup shredded American cheese
  • 1 pound cooked crabmeat
  • 1 cup shredded sharp Cheddar cheese
  • 1 bunch green onions

Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).

To prepare the baking dish, lightly coat it with a thin layer of oil or cooking spray. This will prevent the dish from sticking to the pan during baking.

In a separate bowl, combine egg yolks and heavy cream. Using an electric mixer or whisk, whip the mixture until it becomes light and fluffy.

In a large saucepan, melt butter over medium heat. Add sliced onions and celery to the pan and sauté for about 5 minutes, stirring occasionally. Add salt, cayenne pepper, garlic powder, and Creole seasoning to the pan and stir well.

Reduce heat to low and cover the saucepan, then let it simmer for 20 minutes, stirring every now and then, until the vegetables are extremely tender.

In another bowl, mix flour into the saucepan's contents. Cook and stir continuously for 5 minutes to avoid lumps.

Gradually add the egg yolk mixture, stirring well until combined. Add 1/2 cup of shredded Cheddar cheese and American cheese to the pan, stirring until both cheeses are fully melted.

Remove the saucepan from heat and gently fold in 1/2 cup of crabmeat.

Transfer the mixture to the prepared baking dish and bake for 20 minutes in a preheated oven, or until it's bubbly and lightly browned on top.

Remove the dish from heat and sprinkle sharp Cheddar cheese and chopped green onions on top. Allow the cheese to melt completely before serving.
