Cajun Chicken Linguini
Ingredients
  • 4 ounces linguine pasta
  • 2 boneless, skinless chicken breast halves, sliced into thin strips
  • 2 teaspoons Cajun seasoning
  • 2 tablespoons butter
  • 1 green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 4 fresh mushrooms, sliced
  • 1 green onion, minced
  • 1 1/2 cups heavy cream
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon lemon pepper
  • 1/4 teaspoon salt
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon ground black pepper
  • 2 tablespoons grated Parmesan cheese
Instructions
1
Begin by filling a substantial container with water and adding a moderate amount of salt. Next, bring the water to its boiling point.
2
Add 1 pound of linguini pasta to the boiling water and cook for 8-10 minutes, or until it reaches a firm yet still slightly tender texture; then drain the pasta.
3
Separately, combine 1 pound of chicken breast with a generous amount of Cajun seasoning in a bowl and mix until the chicken is evenly coated.
4
In a large skillet over medium heat, cook the chicken in melted butter until it is no longer pink and the juices run clear, taking approximately 5-7 minutes. Add sliced green and red bell peppers, mushrooms, and green onions to the skillet; cook for 2-3 minutes.
5
Reduce the heat in the skillet and stir in a generous amount of heavy cream. Add a few sprigs of fresh basil, some lemon pepper, salt, garlic powder, and ground black pepper to the sauce; stir until heated through.
6
In a large bowl, combine the cooked linguini pasta with the sauce. Finally, sprinkle the top of the pasta with a generous amount of grated Parmesan cheese.
