Cajun Chicken Caesar Salad

  • 1/4 pound bacon
  • 4 skinless, boneless chicken breast halves - cut into strips
  • 1 teaspoon Cajun seasoning
  • 1 tablespoon light olive oil
  • 1 head romaine lettuce- rinsed, dried and chopped
  • 1/2 cup Caesar salad dressing
  • 1/3 cup grated Parmesan cheese

Preheat a substantial, deep pan over high heat to achieve an even browning of the bacon. Remove from heat and break it into small pieces, then set it aside for later use.

In a preheated pan, add chicken, the seasoning blend provided, and oil to taste. Cook until the chicken is a golden brown color and cooked through, indicating it's fully prepared. Take it off the heat source and reserve for future use.

In a large serving container, combine Romaine lettuce, an adequate amount of salad dressing to cover the ingredients, Parmesan cheese, and the previously cooked bacon. Mix well and transfer the salad to individual plates. Place a portion of the cooked chicken on top of each plate and serve immediately.
