Cajun Blackened Shrimp Stroganoff
Ingredients
  • 1 pound fresh shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 6 ounces fettuccini pasta
  • 1 tablespoon butter
  • 3 cups fresh mushrooms, sliced
  • 1 tablespoon chopped shallots
  • 2/3 cup chicken broth
  • 1/2 cup sour cream
  • 1 tablespoon cornstarch
  • 1 cup chicken broth
  • 1 (7 ounce) jar roasted red bell peppers
  • 1 tablespoon drained capers

Combine the peeled shrimp with oil and Cajun seasoning in a medium-sized bowl, setting it aside for now.

Bring a large pot of salted water to a rolling boil and add the pasta, cooking it for 8 to 10 minutes or until it reaches the perfect al dente texture; drain the excess water.

Meanwhile, melt butter over medium heat in a large skillet and cook the mushrooms and shallot in it until they become tender, removing them from the pan afterwards. Add the shrimp to the same pan and cook until they change color, about 2 to 3 minutes. Remove them from the pan again. Add 2/3 cup of chicken broth to the pan and bring it to a boil, cooking uncovered until reduced to 1/4 cup (2 to 3 minutes).

In a small bowl, whisk together the sour cream and cornstarch; mix in 1 cup of chicken broth. Stir this mixture into the reduced chicken broth in the frying pan, cooking and stirring until it thickens and becomes bubbly. Cook for an additional minute and then stir in the shrimp, mushroom mixture, roasted red peppers, and capers. Heat everything through and season to taste before serving it over the pasta.
