  • 1 medium onion, diced
  • 1 small tomato, diced
  • 1 medium jalapeño pepper, minced
  • salt to taste

Preheat a large skillet over medium heat and pour in the oil. Add the potatoes, cover the skillet, and cook for about 10 minutes or until they start to become tender. Periodically stir the potatoes to ensure even cooking.

Next, add the nopalitos, onion, tomato, jalapeño, and salt to the skillet. Continue cooking, stirring occasionally, until the onion becomes soft and translucent and the potatoes are fully tender, adding a further 10 minutes to the cooking time.
