Cabbage Rolls with Beef and Rice
Ingredients
  • 1 medium head cabbage
  • water to cover
  • 1 pound ground beef
  • 1 cup cooked rice
  • garlic powder to taste
  • 1 egg
  • 1 (12 fluid ounce) can tomato juice
  • 1 tablespoon vinegar
  • 1 tablespoon white sugar
  • water to cover

Put the cabbage head in a large container over high heat and pour in water to cover it thoroughly. Bring the mixture to a boil and cook for 15 minutes, or until the cabbage is tender and easily malleable.

Transfer the cabbage to a separate large bowl, making sure it's free of any debris.

Next, combine the beef, rice, garlic powder and egg in a separate bowl, stirring everything together until it's well incorporated.

Take a small handful of the meat mixture and place it in the center of a cabbage leaf. Fold the leaf over, securing it with your fingers to keep the filling inside.

Place a few of these filled leaves in the bottom of another large container, followed by adding the tomato juice, vinegar and sugar. Pour enough water in to cover everything completely.

Bring the mixture to a gentle simmer over medium low heat, allowing it to cook for approximately 60 minutes.
