Hearty Cabbage Sausage Soup
Ingredients
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 (28 ounce) can crushed tomatoes
  • 3 cups water
  • 1 head cabbage, cored and coarsely chopped
  • 1 pound smoked sausage, sliced
  • 3 carrots, sliced
  • 3 stalks celery, sliced
  • 1 (15 ounce) can red beans, with liquid
  • 1 (8 ounce) can tomato sauce
  • 1/3 cup uncooked long grain white rice
  • 2 cubes chicken bouillon
  • 1 bay leaf
  • 1/2 teaspoon crushed dried thyme
  • salt to taste

Heat a generous amount of vegetable oil in a spacious cooking vessel over an intermediate heat setting. Introduce the onion into the pot and continue to cook it until it develops a light golden color. Next, add crushed tomatoes, water, shredded cabbage, sliced sausage, chopped carrots, diced celery, canned beans, tomato sauce, and uncooked rice. Introduce bouillon into the mixture and stir until it is fully incorporated. Season with a bay leaf, thyme, and salt to taste. Bring the mixture to a rolling boil. Then, lower the heat to a low setting and allow it to simmer for at least 1 hour, or until the vegetables are tender and the rice is cooked.
