Buttery Irish Colcannon
Ingredients
  • 2 1/2 pounds potatoes, peeled and cubed
  • 4 slices bacon
  • 1/2 small head cabbage, chopped
  • 1 large onion, chopped
  • 1/2 cup milk
  • salt and pepper to taste
  • 1/4 cup butter, melted
Instructions
1
Collect all the necessary components required for preparation.
2
Submerge potatoes into a saucepan with sufficient water to completely submerge them. Initiate boiling and continue cooking until they become soft, taking between 15 to 20 minutes. Drain excess water.
3
Concurrently, cook the bacon in a large skillet over medium-high heat, periodically turning it until it is uniformly browned, approximately 10 minutes. Remove the bacon slices from the skillet using paper towels and crumble them; set aside for future use. Reserve the bacon's cooking juices in the skillet.
4
Sauté the cabbage and onion in the reserved bacon drippings within the skillet over medium heat, allowing them to soften and become translucent, taking 10 to 15 minutes; cover the skillet if desired to expedite cooking. Remove from heat.
5
Combine mashed potatoes with milk in a large bowl; add salt and pepper to taste.
6
Integrate the cooked bacon, cabbage, and onion into the mashed potato mixture.
7
Transfer the combined mixture to a large serving dish. Create a depression in the center of the potato mixture and pour melted butter into it.
8
Serve the dish hot.
