Buttery Cashew Caramels
Ingredients
  • 1 cup unsalted butter
  • 1 1/4 cups white sugar
  • 1/4 teaspoon salt
  • 1 tablespoon light corn syrup
  • 10 ounces cashews
Instructions
1
Preheat your oven to its highest temperature setting and place a large baking sheet within it, ensuring the surface is evenly coated with butter or grease to prevent sticking.
2
Next, heat a saucepan over medium heat and combine the melted butter, granulated sugar, salt, and corn syrup within it. Continue to cook and stir the mixture until the butter has fully incorporated and melted, creating a smooth consistency. Introduce the cashews into the saucepan and raise the heat to its highest setting, allowing the mixture to reach a temperature of 300 to 310 degrees F (149 to 154 degrees C) as indicated by a candy thermometer, or until a small amount of the syrup is dropped into cold water and forms hard, brittle threads. Periodically stir this mixture with a long-handled wooden spoon to prevent the cashews from burning and ensure an even cooking process.
3
Once the desired temperature is reached, remove the saucepan from the heat and pour its contents onto the prepared baking sheet. Allow it to cool for approximately 10 minutes, after which break the mixture into desired pieces.
