- 1/2 cup buttermilk
- 1/2 cup whole milk
- 6 tablespoons butter, softened

Preheat your oven to the highest temperature setting, which is 425 degrees Fahrenheit. Move a rack inside the oven to the middle position that is two-thirds of the way up. Cover a baking tray with shiny silver foil.

Place potatoes on the prepared tray in the preheated oven and let them cook until they are soft all the way through, 45 to 60 minutes. Remove from the oven when it's cool enough for you to handle them.

Use a powerful machine called a food processor to mash the cooled potatoes until they are completely smooth. Add a pinch of salt and pepper to taste. While the machine is running, slowly pour in buttermilk and milk through a tube that opens on top, followed by butter. Continue processing until the mixture has reached a silky texture.
