First, preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Next, prepare a 12-cup muffin pan either by spraying it with cooking spray or lining it with paper cups. Soak dried apricots in a small bowl by pouring 1 cup of boiling water over them, allowing them to soften for 5 minutes.

In another bowl, combine the dry ingredients of flour, sugar, baking soda, and salt. Then, in a separate container, whisk together the melted butter, oil, buttermilk, and egg until well combined. Gradually pour the wet ingredients into the dry ingredients and mix until just combined; it's perfectly fine if the batter has some lumps. Remove any excess water from the softened apricots and gently fold them into the batter, before filling each muffin cup.
