  • 3 tablespoons barbecue dry rub
  • 1/2 cup Kansas City style BBQ sauce
  • 4 sandwich or hoagie rolls
  • 1 (8 ounce) container cheese whiz, or sliced cheese as needed
  • 2/3 cup sautéed onions
  • 2/3 cup chopped jarred pickled peppers
  • 2 tablespoons sliced green onions

Gather all the necessary ingredients and preheat your oven to 325 degrees Fahrenheit (165 degrees Celsius). Next, take the beef and sprinkle it with a dry rub seasoning blend. Then, wrap it tightly in aluminum foil to help retain moisture during cooking. Place the wrapped beef on a baking sheet or in a rectangular baking dish, making sure the seam side is facing upwards. After that, put it in the preheated oven and roast for 2 1/2 hours.

Allow the beef to rest undisturbed for a period of one hour. Remove the foil and transfer the beef to a cutting board, where you can reserve all the juices that have accumulated. Cut the beef into 1-inch cubes and place them in a large mixing bowl. Add any leftover juices, and if desired, sprinkle some extra dry rub seasoning blend on top. Finally, pour in the BBQ sauce and mix everything together until it's well combined. Wrap the bowl tightly with plastic wrap, cover it with a lid or plastic wrap, and refrigerate overnight to allow the flavors to meld.

The next day, preheat your oven to 450 degrees Fahrenheit (230 degrees Celsius). Carefully transfer the beef cubes into a shallow baking dish, making sure to brush them generously with BBQ sauce. Place the dish in the preheated oven and roast until the edges start to develop a nice char, which should take about 1 hour. Remove the dish from the oven and brush the beef with BBQ sauce again. Reduce the oven temperature to 250 degrees Fahrenheit (120 degrees Celsius) and continue roasting until the "burnt ends" are as tender as you prefer, which should take about 1 1/2 hours more.
