Bulgogi Sloppy Joes

  • 1/2 cup water
  • 2 tablespoons raw cane sugar
  • 1 teaspoon sriracha sauce
  • 1 small cucumber, thinly sliced
  • 1/2 small red onion, sliced into petals
  • 1 pound lean ground beef
  • 2/3 cup reduced-sodium soy sauce
  • 1/2 cup brown sugar
  • 3 green onions, chopped
  • 2 teaspoons sesame oil
  • 1 tablespoon sriracha sauce
  • 1 teaspoon garlic puree
  • 1 teaspoon ginger paste
  • 6 sesame seed burger buns

Combine rice vinegar, water, sugar, and sriracha in a small saucepan and place it over medium heat. Allow the mixture to reach its boiling point, stirring occasionally. Continue cooking until the sugar has fully incorporated and dissolved, taking approximately 2 minutes to achieve this. Next, prepare a dish by placing sliced cucumber and red onion in it. Pour the vinegar mixture over the top of these ingredients, allowing them to marinate as you continue with the preparation of the bulgogi.

Meanwhile, heat a large skillet over medium-high heat. Add ground beef to the hot skillet and stir it constantly until it is no longer pink, taking around 5 minutes to accomplish this. Remove the excess grease from the skillet by draining it and then return the beef to the pan. Add soy sauce, brown sugar, green onions, sesame oil, sriracha, garlic, and ginger to the skillet. Stir occasionally as you continue cooking until the sauce begins to thicken, which should take about 8 minutes.

Finally, assemble the bulgogi by placing it onto hamburger buns. Top this with the pickled cucumbers and onions that you prepared earlier.
