Ingredients
- 1 slice multigrain bread
- 1 pound ground buffalo meat
- 1 onion, diced
- 1 egg, lightly beaten
- 1 teaspoon mustard powder
- 3/4 cup canned diced tomatoes, drained
- 1 teaspoon salt
- 1 dash ground black pepper
- 1/3 cup ketchup
Instructions
1
Preheat your oven to a high temperature of 350 degrees Fahrenheit (or 175 degrees Celsius, if you prefer metric). Next, break the bread into small pieces and set them aside for later use.
2
Now, take a moment to prepare your baking dish by coating it with a thin layer of grease. This will prevent the meatloaf from sticking to the dish as it bakes.
3
To make the meat mixture, combine ground buffalo meat with a finely chopped onion, an egg, ground mustard, diced tomatoes, salt, and pepper in a large bowl. Mix everything together until it's well combined.
4
Using your hands, shape the meat mixture into a rectangular loaf about 8 inches wide and 4 inches deep. Place this loaf in the center of your prepared baking dish.
5
Now, brush a layer of ketchup evenly over the top and sides of the meatloaf. This will give it a rich, savory flavor.
6
Finally, place your meatloaf in the preheated oven and bake until it's no longer pink and a sticky ketchup glaze has formed over the top, about 1.5 hours. Remove it from the oven and let it stand for 10 minutes before serving.
