Buffalo Chicken Potato Casserole
Ingredients
  • cooking spray
  • 6 tablespoons hot pepper sauce
  • 1/3 cup olive oil
  • 2 tablespoons garlic powder
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon paprika
  • 1 1/2 teaspoons salt
  • 8 potatoes, cut into 1/2-inch cubes
  • 2 pounds skinless, boneless chicken breast halves, cut into 1/2-inch cubes
  • 2 cups shredded Mexican cheese blend (such as Great Value Fiesta Blend®)
  • 1 cup crumbled cooked bacon
  • 1 cup diced green onions
Instructions
1
Gather all necessary ingredients and materials beforehand.
2
Preheat your oven to a high temperature of 500 degrees Fahrenheit (260 degrees Celsius). Next, spray a standard-sized 9x13-inch baking dish with cooking spray to prevent food from sticking.
3
Heat the hot pepper sauce, olive oil, garlic powder, black pepper, paprika, and salt in a large skillet over low heat, stirring until everything is thoroughly blended together. Turn off the heat source.
4
Now, take the potatoes and coat them evenly with the hot pepper sauce mixture. Use a slotted spoon to transfer the potatoes to the prepared baking dish, leaving some of the sauce behind in the skillet.
5
In a separate bowl, mix the chicken with the remaining hot pepper sauce mixture and let it marinate while the potatoes roast in the oven.
6
Place the roasted potatoes in the oven and bake them until they are tender on the inside and crispy on the outside, taking about 45 to 50 minutes. Stir the potatoes every 10 to 15 minutes during this time.
7
Reduce the oven temperature to a moderate level of 400 degrees Fahrenheit (205 degrees Celsius).
8
Spread the chicken cubes over the roasted potatoes, making sure they are evenly distributed.
9
Sprinkle shredded cheese, cooked bacon, and green onions over the chicken cubes. Return the dish to the oven.
10
Bake in the oven until the chicken is cooked through and the cheese topping is bubbling, taking about 15 minutes.
