Spicy Buffalo Chicken Pasta Salad
Ingredients
  • 1 (16 ounce) package uncooked rotini pasta
  • 1 cup chunky blue cheese dressing
  • 1/2 cup mayonnaise
  • 1/2 cup buffalo wing sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound frozen cooked chicken strips, defrosted and diced
  • 1 cup red onion, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup green bell pepper, diced

Fill a large pot with water that has been lightly seasoned with salt, then bring it to a vigorous boil. Introduce the rotini pasta into the pot and return it to a rolling boil. Continue cooking the rotini uncovered, stirring occasionally, until it reaches your desired level of doneness, which should take around 8 minutes. Remove the pot from the heat source and let the water drain off into a colander positioned in the sink.

In a large bowl, combine the ingredients of blue cheese dressing, mayonnaise, Buffalo sauce, salt, and pepper. Mix these components together until they are well incorporated. Then, add the chicken, onion, bell peppers, and cooked rotini pasta to the bowl and stir until everything is evenly coated with the dressing mixture. Cover the bowl with a lid to keep it fresh and refrigerate it for at least 1 hour before serving.
