- 2 1/4 cups Buffalo wing sauce, divided
- 1/2 cup butter
- 1/4 cup honey
- 2/3 cup bread crumbs
- 1/3 cup finely chopped celery
- 1/3 cup finely chopped green onions
- 1/4 cup crumbled blue cheese
- 2 large eggs
- 2 pounds ground chicken
- 3/4 teaspoon kosher salt
- 1/2 teaspoon ground black pepper

Preheat the oven to 450 degrees Fahrenheit, or 230 degrees Celsius. Cover a baking sheet with aluminum foil and lightly mist it with cooking spray to prevent sticking.

In a slow cooker, blend 2 cups of Buffalo sauce, melted butter, and honey together. Cover the slow cooker and set it to High while you prepare the meatballs.

In a large mixing bowl, combine bread crumbs, chopped celery, green onions, crumbled blue cheese, eggs, and the remaining 1/4 cup of Buffalo sauce. Mix everything together until it's well incorporated. Add diced chicken, salt, and pepper to the bowl; mix until just combined.

Wet your hands and shape the mixture into 1 1/2-inch meatballs. You should end up with around 44 meatballs in total.

Transfer the formed meatballs to the prepared baking sheet and bake them in the preheated oven until they're holding together well and lightly browned, approximately 8 minutes. At this point, the meatballs won't be fully cooked.

Transfer the baked meatballs to the slow cooker and stir them well into the sauce. Reduce the heat to Low and cook until an instant-read thermometer inserted into the centers reads at least 160 degrees Fahrenheit, taking around 1 to 2 hours. Keep the meatballs warm until you're ready to serve.
