Bubba's Southern Gumbo

  • 6 slices bacon, cut into 1 inch pieces
  • 1 cup chopped celery
  • 1 green bell pepper, seeded and chopped
  • 1 onion, chopped
  • 1/2 pound cubed cooked ham
  • 1/2 pound cubed cooked chicken
  • 1/2 pound cubed smoked sausage
  • 2 (14.5 ounce) cans crushed tomatoes, with liquid
  • 2 cups beef broth
  • 2 cups chicken broth
  • 1 teaspoon dried thyme
  • 2 teaspoons Cajun seasoning
  • 2 cups uncooked white rice
  • 1/2 pound salad shrimp

Preheat a large pot over high heat, allowing it to reach the desired temperature. Add slices of bacon and cook until they become golden brown and crispy, then carefully remove them with a slotted spoon and set aside.

Then, add diced celery, sliced bell pepper, and chopped onion to the same pot with the bacon drippings. Cook these vegetables until they are tender and easily pierced with a fork.

Next, add diced ham, shredded chicken, and sliced sausage to the pot. Pour in canned tomatoes, beef broth, and chicken broth, stirring well to combine. Add a pinch of thyme and Cajun seasoning for added flavor.

Bring the mixture to a rolling boil, then add uncooked white rice. Continue boiling until the liquid has been absorbed and the rice is tender, about 20 minutes.

Finally, add cooked shrimp to the pot just before serving. If using uncooked shrimp, cook for an additional 5 minutes before presenting.
