Brussels Sprouts with Pears and Bacon
Ingredients
  • 1 pound Brussels sprouts, cut in half
  • 2 Anjou pears, cubed
  • 3 tablespoons olive oil, divided
  • 1 onion, diced
  • 1 teaspoon garlic powder
  • salt to taste
  • 1 slice bacon, cut into small pieces, or more to taste
  • 1/4 cup balsamic vinegar
Instructions
1
Preheat the oven to a high temperature of 425 degrees Fahrenheit, or 220 degrees Celsius.
2
Lightly coat the interior of a baking dish with a thin layer of oil or cooking spray to prevent sticking.
3
To create the main ingredient, mix together Brussels sprouts and pears in a bowl with 2 tablespoons of olive oil, finely chopped onion, garlic powder, and a pinch of salt.
4
Spread the combined ingredients evenly into the prepared baking dish.
5
Place the dish in a preheated oven and bake until the ingredients are nicely browned and tender, taking approximately 25 to 30 minutes. Halfway through the cooking time, gently stir the mixture to promote even browning.
6
Simultaneously, cook bacon strips in a large skillet over medium-high heat, stirring occasionally until they are evenly browned on both sides, taking around 10 minutes. Remove the cooked bacon from the skillet and place it on paper towels to drain excess grease.
7
After removing the bacon, discard its used grease and add any remaining olive oil to the skillet. Introduce balsamic vinegar into the skillet, stirring constantly over low heat until the mixture reduces slightly, taking about 3 to 4 minutes.
8
Pour this reduced sauce over the roasted ingredients and serve.
