Brunei Beef Rendang Curry

  • 1 pound beef round, diced
  • 2 tablespoons cooking oil
  • 3/4 cup dried shrimp, minced
  • 1 clove garlic, minced
  • 1 tablespoon chopped lemon grass
  • 2 onions, chopped
  • 1 3/4 cups coconut milk
  • 1/2 cup red curry paste, or to taste
  • 3 tablespoons turmeric powder
  • 1 fresh red chile pepper, finely chopped
  • 1 bunch fresh cilantro, chopped

Start by tenderizing the beef in a saucepan, submerging it under enough water to fully cover the meat. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for at least an hour. Once cooked, carefully remove the beef from the water and set it aside to rest.

Next, heat a generous amount of oil in a wok over medium-high heat. Add the minced garlic and dried shrimp to the pan, stirring quickly before adding in the sliced lemon grass and onions. Lower the heat to a medium setting and stir in the coconut milk, red curry paste, turmeric, and chile pepper. Combine the beef with these ingredients and cover the wok, allowing it to simmer for 10 minutes over a medium heat.

Finally, stir in the chopped cilantro just before serving. If desired, reserve some of this herb for a decorative garnish on top of the dish.
