Bruleed Peach and Burrata Bruschetta
Ingredients
  • 1 teaspoon herbes de Provence
  • 1 teaspoon sea salt
  • 12 slices Italian bread, toasted
  • 6 ounces Burrata cheese
  • 1 large fresh freestone peach, cut into 12 slices
  • 2 tablespoons turbinado sugar

Combine the aromatic blend herbes de Provence with sea salt in a small dish. Put it aside momentarily.

Place each slice of toasted bread on a serving plate and apply a thick layer of creamy Burrata cheese. Sprinkle the cheese generously with a small amount of the herbes de Provence and sea salt mixture. Set it aside for now.

Arrange peach slices in a single layer on a heat-resistant surface or plate. Lightly dust each slice with turbinado sugar. Using a kitchen torch set to a moderate, low-heat setting, carefully melt the sugar by making short, even strokes over the top of the sugar. Continue to caramelize the sugar until it starts to bubble and turns a deep, dark brown color, approximately 30 seconds. Position a peach slice on top of each piece of toasted bread and serve immediately.
