Brown Sugar Bubble Tea
Ingredients
  • 4 1/4 cups water, divided
  • 1/4 cup white tapioca pearls (boba)
  • 2 tablespoons black tea leaves
  • 1/4 cup brown sugar
  • 1 cup ice cubes
  • 1/4 cup milk
  • 2 tablespoons sweetened condensed milk, or to taste

Boil 2 cups of water in a small saucepan over high heat. Introduce tapioca pearls and stir softly until they start rising to the surface. Lower the heat to medium-low and cook for approximately 25 minutes, or until they become tender and have a rich brown color. Remove from heat, cover the saucepan, and allow it to rest for 15 minutes.

Separately, bring another 2 cups of water to a boil. Immediately remove from heat and add tea leaves. Allow the tea to steep for 15 minutes, infusing its flavors. Strain out the used tea leaves and refrigerate the brewed tea for later use.

Drain the cooked tapioca pearls. In the same saucepan, bring 1/4 cup of water to a boil over high heat. Gradually stir in brown sugar until it dissolves completely. Submerge the pearls into the syrup and let them cool to room temperature, taking around 15 minutes.

Fill two tall glasses with an equal amount of cooked tapioca pearls and syrup. Pour brewed tea into both glasses. Add ice cubes, milk, and sweetened condensed milk to each glass before stirring them together.
