  • 1 1/4 cups dried mixed fruit
  • 1/2 cup white sugar
  • 1 tablespoon white sugar
  • 1 teaspoon mixed spice
  • 5 tablespoons milk
  • 1 egg
  • 2 tablespoons light brown sugar, or as needed

Begin by heating your oven to the desired temperature of 350 degrees F (175 degrees C). Next, take a 6-inch round cake pan and grease it with butter to prevent the cake from sticking.

In a separate bowl, place the flour and use your fingers or a pastry blender to work the butter into it until you achieve a mixture that resembles fine bread crumbs. Add the mixed fruit, 1 cup plus 1 tablespoon of sugar, and the mixed spice to the bowl. Mix everything together until it's well combined.

In a separate container, whisk together the milk and egg. Pour this mixture into the bowl with the flour mixture and mix until you have a soft, easy-to-drop batter.

Using a spoon or a ladle, drop the batter into the prepared cake pan. Sprinkle a thin layer of light brown sugar on top and use the back of a spoon to gently press it down into the batter.
