British Fish Pie
Ingredients
  • 2 pounds potatoes, peeled and diced
  • 2 cups milk
  • 1 bay leaf
  • 1/2 teaspoon ground nutmeg
  • 1 (1 pound) fillet cod
  • 1/2 cup butter, divided
  • 1 medium leek, white part only, chopped
  • 1/4 cup all-purpose flour
  • 4 ounces grated sharp Cheddar cheese, divided
  • 1 cup peas
  • salt and ground black pepper to taste
  • 2 hard-boiled eggs, quartered
Instructions
1
Initial Preheating
2
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
3
Boiling Potatoes
4
Fill a large container with water and add salt; then, place the potatoes inside. Bring the mixture to a boil and reduce heat to a lower temperature; let it simmer until tender, approximately 20 minutes. Drain the potatoes and allow them to cool.
5
Preparing Cod
6
Combine milk, a bay leaf, and nutmeg in a large pan; heat it gently over low-medium heat. Add the cod to the mixture and poach until flaky, about 5 minutes. Use a slotted spoon to transfer the cod onto a plate; reserve the poaching liquid. Then, use a fork to break down the fish into bite-sized pieces.
7
Mashing Potatoes
8
Combine mashed potatoes in a large bowl. Add 3 tablespoons of butter and 2 tablespoons of poaching liquid; mix until the potatoes are stiff but not too runny.
9
Cooking Leek
10
Heat 1 tablespoon of butter in a skillet over medium heat; add the leek and cook until it's softened and translucent, about 5 minutes. Set it aside.
11
Making Sauce
12
Melt the remaining 1/4-cup of butter over medium heat in a large, deep skillet; it should just stop bubbling. Add flour and stir the mixture continuously for 1 minute. Slowly pour in the remaining poaching liquid, continuously stirring, to create a base for your sauce. Add 1/2 of sharp Cheddar cheese and stir until melted. Fold in the flaked cod, leek, and peas. Season with salt and pepper.
13
Assembling Dish
14
Place the fish mixture in an oven-proof dish; gently press boiled eggs onto the surface of the filling. Cover with a thick layer of mashed potatoes and sprinkle with remaining Cheddar cheese.
15
Baking
16
Place the dish in your preheated oven and bake until the top is starting to brown, approximately 30 minutes. Serve immediately.
