Breakfast Burritos

  • 1 pound bulk pork sausage
  • 1/2 small onion, chopped
  • 2 teaspoons butter
  • 12 eggs, beaten
  • 1 (4 ounce) can diced green chilies, drained
  • 3/4 cup process cheese food (such as Velveeta®), divided
  • 3/4 cup salsa
  • 1 (10 ounce) package burrito-size flour tortillas

Begin by heating a skillet over medium heat and add the pork sausage and onion. Allow them to cook until the sausage is nicely browned, taking around 10 minutes. During this time, break the meat apart into small crumbles as it cooks. Remove any excess grease that accumulates.

In a separate pan, heat butter over medium heat until it reaches a state where the foam dissipates. Then, combine the beaten eggs with chilies in this pan and stir constantly until they reach a soft scramble but not an overcooked consistency, approximately 3 minutes. Transfer the scrambled eggs to a large bowl and mix in the cooked sausage mixture.

Next, place a tortilla on a microwave-safe plate and heat it in the microwave for 10 to 20 seconds, depending on your preference. The tortilla should be warm and pliable at this point. Spoon about 1/2 cup of the sausage and egg mixture in a straight line down the center of the tortilla, positioning it slightly off-center. Add about 1 tablespoon of shredded cheese and 1 tablespoon of salsa on top of the filling.

Fold the two opposite ends of the tortilla over the filling, pressing them down firmly so they stay in place. Then, roll the shorter unfolded edge over the burrito, pushing the filling towards the back of the roll as you go. Continue to snugly enclose the filling by keeping the two ends folded as you roll. If desired, wrap the burrito in foil to keep it warm and secure. Repeat this process with the remaining tortillas.
