Ingredients
- cooking spray
- 2 large eggs
- 1 tablespoon water
- 1 cup seasoned bread crumbs
- 4 (5 ounce) bone-in, center-cut pork chops
- 1 1/2 teaspoons kosher salt
- 1 teaspoon ground black pepper
- 1/4 cup olive oil
Instructions
1
Preheat your oven to a high temperature of 375 degrees Fahrenheit (or 190 degrees Celsius for those using metric measurements).
2
Next, prepare a wire rack by lightly spraying it with cooking spray and placing it in a rimmed baking sheet. This will help create a crispy exterior on your pork chops.
3
In one shallow dish, combine eggs and water. In another shallow dish, place bread crumbs.
4
To season your pork chops, sprinkle salt and pepper evenly across both sides of the meat.
5
Now, coat each chop in a mixture of eggs and water, allowing any excess to drip off before coating with bread crumbs.
6
Heat half of the oil in a large skillet over medium-high heat. Place two pork chops in the skillet and cook until they are golden brown and crispy, approximately 2 minutes. Flip them over and continue cooking for an additional 1 to 2 minutes, or until they are crispy on both sides. Transfer the cooked chops to the prepared wire rack. Repeat this process with the remaining oil and pork chops, searing each one until it is golden brown.
7
Finally, place the pork chops in the preheated oven and cook until they are no longer pink in the center, taking around 10 to 15 minutes. To ensure the pork chops are cooked through, insert an instant-read thermometer into the center and check that it reads 155 degrees Fahrenheit (or 68 degrees Celsius).
