Bread Pudding with Coquito Sauce
Ingredients
  • 5 cups cubed bread
  • 1/4 cup raisins
  • 2 1/4 cups eggnog
  • 4 large eggs
  • 1/3 cup white sugar
  • 1 teaspoon vanilla extract
  • 1 cup packed brown sugar
  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream
  • 3 tablespoons coconut-flavored rum

Firstly, heat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius if you prefer metric).

Next, take a 9x5-inch loaf pan and grease it with butter to prevent your bread pudding from sticking.

Then, combine the bread and raisins in a bowl and mix them together. After that, transfer this mixture to your prepared loaf pan.

Afterwards, in a separate bowl, whisk together the eggnog, eggs, white sugar, and vanilla extract until well combined.

Finally, pour the eggnog mixture over the bread mixture in your loaf pan.

Then bake this mixture in a preheated oven for 40 to 45 minutes, or until a knife inserted into the center comes out clean.

While your bread pudding is baking, melt brown sugar and butter together in a saucepan over medium heat.

Add cream and rum to the saucepan, then simmer until the sauce thickens and reduces to 1 1/2 cups, approximately 5 minutes.

Once the bread pudding is done baking, serve it warm over the brown sugar sauce.
