Ingredients
- 1 1/3 cups warm water (110 degrees F/45 degrees C)
- 1 1/2 teaspoons olive oil
- 4 cups unbleached all-purpose flour
- 1 tablespoon light brown sugar
- 1 1/2 teaspoons salt
- 1 (.25 ounce) package active dry yeast
- 2 tablespoons cornmeal
- 1 large egg
- 1 tablespoon water
Instructions
1
Gather all necessary ingredients and equipment beforehand.
2
Combine warm water, olive oil, flour, brown sugar, salt, and yeast in a bread machine in the specified order or as recommended by your manufacturer's instructions. Run the Dough cycle, which typically takes around 90 minutes.
3
Prepare a surface by sprinkling cornmeal onto a cutting board. Once the dough is ready, punch it down and transfer it to a lightly floured surface. Shape the dough into two loaves.
4
Carefully place the loaves, seam-side down, onto the prepared cutting board; cover them with a damp cloth and let them rise until they have doubled in size, approximately 40 minutes.
5
While the loaves are rising, preheat your oven to 375 degrees F (190 degrees C).
6
In a small bowl, whisk together an egg and 1 tablespoon of water to create a glaze. Brush this mixture over the risen loaves.
7
Using a sharp knife, make a quick and precise cut down the center of each loaf. Gently shake the cutting board to ensure the loaves are not sticking; if necessary, use a spatula or pastry knife to loosen them. Slide the loaves onto a baking sheet with care.
8
Bake the loaves in the preheated oven until they are golden brown and produce a hollow sound when tapped on the bottom, typically taking 30 to 35 minutes.
