  • 2 cups lemon juice
  • 1 cup white sugar
  • 1 tablespoon butter
  • 1 tablespoon rum
  • 6 ripe bananas, halved lengthwise
  • 7 cups water
  • 3 1/2 cups brown rice
  • 2 (15 ounce) cans black beans, drained
  • 1 (14.5 ounce) can diced tomatoes
  • 2 teaspoons vegetable oil
  • 2 (4 ounce) links sausage
  • 2 pinches dried dill
  • 2 pinches dried basil

Begin by preheating your oven to a high temperature of 400 degrees F (200 degrees C). Next, take some time to grease a standard 9x13-inch baking dish with cooking spray.

In a small saucepan, combine the juice of lemons, granulated sugar, melted butter, and a splash of rum. Place the saucepan over low heat and let it simmer for about 10 minutes, stirring occasionally until the sugar has fully dissolved and the sauce thickens slightly.

Arrange a layer of sliced bananas in the prepared baking dish, with their cut sides facing downwards. Pour just enough of the sauce over the bananas to cover them, reserving any leftover sauce for serving.

Place the baking dish in the preheated oven and let it bake until the bananas are tender and sticky, taking around 30 minutes to achieve this.

In a separate saucepan, bring some water and brown rice to a boil over high heat. Once boiling, reduce the heat to medium-low and let it simmer with a lid on until the rice is tender and all the liquid has been absorbed, taking around 45 to 50 minutes.

In a skillet over low heat, combine cooked black beans and diced tomatoes. Let them warm through until heated through, taking about 10 minutes.

Heat some oil in a large skillet over medium heat. Add the sausage links and cook, flipping them frequently until they are no longer pink in the center, taking about 10 minutes. Slice the cooked sausage into small pieces.

In a large bowl, combine the cooked rice and black beans. Sprinkle some chopped fresh dill and basil on top of the rice mixture. Add the cooked sausage and gently mix everything together to combine.
