Brazilian Pork and Bean Stew
Ingredients
  • 2 tablespoons vegetable oil
  • 1 teaspoon minced garlic
  • 1 large onion, chopped
  • 1 (12 ounce) pork tenderloin, cut into 1/2 inch cubes
  • 1 (19 ounce) can black beans, drained and rinsed
  • 1/4 cup water
  • 1 1/2 cups chicken stock
  • 3 chorizo sausages, cut into 1/2 inch thick pieces
  • 2 bay leaves
  • salt and pepper to taste

Heat 1 tablespoon of vegetable oil in a pan over medium heat, stirring in minced garlic and chopped onion. Allow the mixture to cook for a short time until the onion becomes tender and slightly transparent. \nTransfer the cooked onion to a saucepan, reserving it for later use.

Pour the remaining 1 tablespoon of vegetable oil into the pan and increase the heat to medium-high. Add cubed pork and cook until it is nicely browned on all sides.

In a separate bowl, combine 3/4 of the black beans with 1/4 cup of water. Blend them using a blender until they are finely chopped, but still retain some texture.

Add the whole black beans and their pureed form to the saucepan along with the cubed pork, chicken stock, sliced chorizo, and bay leaves. Bring the mixture to a boil over medium-high heat before reducing the heat to medium-low, covering it, and letting it simmer for 30 minutes.

Season the dish with salt and pepper to taste before serving.
