- 1 (3 pound) rack of whole beef ribs (not short ribs)
- 2 tablespoons sea salt, or more if needed

Preheat your oven to the optimal temperature of 275 degrees Fahrenheit (or 135 degrees Celsius).

Position a rib rack on a stable work surface, ensuring the white membrane is facing upwards. Utilize a sharp blade to carefully slice beneath the membrane and detach it from the meat in one continuous motion, if feasible; discard the detached membrane. Generously apply salt to both sides of the ribs, coating them evenly.

Place the prepared ribs onto a cooking rack in a roasting pan.

Bake the ribs in the preheated oven for 1 and a half hours, allowing them to cook thoroughly.

Every 45 minutes or so, take the time to baste the ribs with a small amount of water, exercising extreme caution not to dislodge any salt particles. Continue baking and basting until the meat becomes extremely tender; a total cooking time of approximately 6 hours will be achieved.

Remove the ribs from the oven and permit them to rest for 10 to 15 minutes before portioning into three separate pieces.
