Ingredients
- 1 pound dried hominy
- 8 cups water
- 2 (14 ounce) cans coconut milk
- 1 (14 ounce) can sweetened condensed milk
- 2 cups milk
- 2 tablespoons white sugar, or to taste
- 3 (2 inch) sticks cinnamon sticks
- 1/2 teaspoon ground cinnamon, plus more for garnish
- 8 whole cloves
- 1 3/4 cups freshly grated coconut
Instructions
1
Combine hominy and water in a large saucepan, allowing it to marinate for an extended period of time, typically ranging from 8 hours up to overnight.
2
Once the hominy has had its full soaking time, bring it and the accompanying liquid to a rolling boil over extremely high heat. Gradually decrease the heat level and let it simmer until the hominy has become tender, approximately taking around 1 hour.
3
Subsequently, add a rich and creamy mixture consisting of coconut milk, condensed milk, regular milk, 2 tablespoons of sugar, a few whole cinnamon sticks, 1/2 teaspoon of ground cinnamon, and a few whole cloves.
4
Continue to cook this mixture over low heat until it has reached the desired consistency, roughly taking around 15 minutes.
5
At this stage, take a moment to sample the mixture and adjust its sweetness as necessary by adding more sugar if required.
6
Finally, stir in some shredded coconut to add a delightful textural element.
7
Transfer the prepared mixture into individual serving bowls and finish it off by sprinkling a generous amount of cinnamon on top.
