Brazilian Cornmeal Cakes
Ingredients
  • 1 1/2 cups white sugar
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 cup milk, at room temperature
  • 1/4 cup melted butter

Combine sugar, cornmeal, flour, and salt in a bowl until they are well incorporated; crack in eggs.

Blend milk and melted butter together in another bowl until they form a uniform consistency; pour this mixture into the cornmeal mixture and blend until smooth, around 5 minutes.

Preheat a griddle over extremely high heat; grease the surface of the griddle with a small amount of oil.

Drop spoonfuls of the cornmeal mixture onto the hot griddle; cook until it turns a golden color, flipping over halfway through and cooking for an additional 5 minutes on the other side.
