Brazilian Chicken Stew
Ingredients
  • 1 tablespoon vegetable oil
  • 1 tablespoon white sugar
  • 2 pounds bone-in, skin-on chicken thighs, or more to taste
  • 1 tablespoon salt
  • 1 teaspoon ground black pepper
  • 1 large onion, chopped
  • 1/2 (14.5 ounce) can petite diced tomatoes, or more to taste
  • 1 cup chicken broth, or more as needed

Initiate cooking by warming oil in a deep frying pan over a low flame. Scatter sugar evenly across the bottom of the pan.

Season chicken thighs with salt and pepper; cook in batches until they develop a rich brown color, approximately 5 minutes on each side.

Transfer the cooked chicken to a serving plate. Remove the skin from the chicken pieces.

Sauté onions in the same pan until they become soft and translucent, taking around 5 to 10 minutes. Introduce diced tomatoes into the pan and stir well.

Return the chicken back to the pan, adding just enough broth to cover it halfway. Simmer partially covered for an extended period of time until the chicken becomes tender and no longer pink in its center, approximately 1 hour.
