Brazilian Black Bean Stew with Mango
Ingredients
  • 1 tablespoon canola oil
  • 1/4 pound chorizo sausage, chopped
  • 1/3 pound cooked ham, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 (1 pound) sweet potatoes, peeled and diced
  • 1 large red bell pepper, diced
  • 2 (14.5 ounce) cans diced tomatoes with juice
  • 1 small hot green chile pepper, diced
  • 1 1/2 cups water
  • 2 (16 ounce) cans black beans, rinsed and drained
  • 1 mango - peeled, seeded and diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 teaspoon salt

Preheat a large cooking vessel over an intermediate heat source, and warm the oil within it. Add the chorizo and ham to the pot, and cook for 2-3 minutes on average. Introduce the onion into the mixture, allowing it to soften before proceeding.

Next, incorporate the garlic into the pot, and cook until it reaches a tender state. Combine this with the sweet potatoes, bell pepper, tomatoes with their juice, chile pepper, and water. Bring this mixture to a rolling boil, then decrease the heat to a low setting, cover it with a lid, and let it simmer for 15 minutes, or until the sweet potatoes have become tender.

Subsequently, add the beans to the pot, and continue cooking it uncovered until heated through. Introduce the mango into this mixture, along with the cilantro, and season it with salt to taste.
