Ingredients
- 2 tablespoons olive oil, divided
- 1 red onion, chopped
- salt and ground black pepper to taste
- 2 whole Branzino (sea bass) fish, cleaned
- 4 lemon wedges, divided
- 2 sprigs fresh rosemary
- 1/2 cup white wine
- 1/4 cup lemon juice
- 1 tablespoon fresh oregano leaves
- 1/4 cup chopped Italian flat-leaf parsley

Begin by preheating your oven to a medium-high temperature of 325 degrees Fahrenheit or its equivalent in Celsius, which is 165 degrees.

Next, carefully pour a small amount of olive oil - approximately one tablespoon - into a large baking dish; add sliced red onion and sprinkle with salt and pepper to taste.

Now, carefully place two whole fish into the baking dish. Stuff each of their cavities with a slice of lemon, a sprig of rosemary, and some of the red onion that has been added.

Add a splash of white wine and lemon juice over the fish, followed by a sprinkle of dried oregano. Finally, drizzle any remaining olive oil over the top.

Place the fish in the preheated oven and bake until it is opaque and easily breaks apart with a fork, taking around 25 minutes.

Once the fish has cooked, use a gentle touch to slide a spatula between their bones in order to separate them. Remove all the bones, and then present the fish on a platter.

Finish by garnishing the dish with some fresh parsley and two slices of lemon, which will add a pop of color to your finished dish.
