Brandy and Raisin Sweet Potatoes
Ingredients
  • 1/4 cup brandy
  • 1/2 cup raisins
  • 2 tablespoons softened butter
  • 4 (1 pound) sweet potatoes
  • 1/4 cup packed brown sugar
Instructions
1
Soak the plump, sweet raisins in a generous amount of brandy within a small bowl, cover it securely, and let the mixture sit for 2 hours to allow the flavors to meld together beautifully.
2
Next, preheat your oven to a high temperature of 350 degrees Fahrenheit (or 175 degrees Celsius, if you prefer metric). Take a generous amount of softened butter and generously butter a 2-quart baking dish with it, making sure to cover the entire surface.
3
Subsequently, place the sweet potatoes on a baking sheet and bake them in the preheated oven until they are tender, which should take approximately 30 minutes. Remove them from the oven and allow them to cool down until they are cool enough to handle comfortably, then peel off their outer layers and slice them into thin pieces, approximately 1/2 inch thick.
4
Now, arrange the sliced sweet potatoes in the prepared baking dish and sprinkle them with a generous amount of sugar and those deliciously soaked raisins that have been infused with the rich flavors of brandy.
5
Finally, return the sweet potatoes to the oven and bake them for 30 to 40 minutes until they are hot, bubbly, and absolutely divine.
