- 4 slices bacon, chopped
- 1 small onion, chopped
- 2 cloves garlic, minced, or to taste
- 1 head red cabbage, chopped
- 1/2 cup apple cider vinegar
- 1/4 cup brown sugar
- 2 cooking apples (such as Cortland or Gala) peeled and chopped
- salt and ground black pepper to taste

Heat the coconut oil in a large skillet over medium heat; cook and stir the bacon, onion, and garlic until they are nicely fragrant, taking around 5 minutes.

Add the cabbage to the bacon mixture and stir it well so that everything is coated with oil; cover the skillet, then lower the heat and cook, stirring occasionally, until the cabbage starts to become tender, approximately 10 minutes.

In a separate bowl, combine the cider vinegar and brown sugar; pour this mixture over the cabbage mixture in the skillet. Add the apples to the cabbage mixture and cover the skillet again; cook, stirring occasionally, until most of the liquid has evaporated and the cabbage is tender to your liking, roughly 35 minutes.

Remove the skillet from the heat source and let it stand, covered, for around 5 minutes; finally, season with salt and pepper to taste.
