Braised Miso Pork
Ingredients
  • 1 tablespoon canola oil
  • 5 pounds pork butt (shoulder roast) cut into 2-inch slices
  • 2 tablespoons minced garlic
  • 1 teaspoon minced ginger
  • 2 cups water, more if needed
  • 1/3 cup soy sauce
  • 1/3 cup brown sugar
  • 3/4 cup white (shiro) miso
Instructions
1
Preheat a large Dutch oven over medium-high heat, allowing the canola oil to warm up and become hot.
2
Sear pork slices until they achieve a deep, rich brown color on both sides, before taking them out of the pot.
3
Stir in minced garlic and grated ginger, cooking until their aromas fill the air for about 30 seconds.
4
Add water, soy sauce, brown sugar, and miso paste to the pot; stir until everything is well combined.
5
Bring the mixture to a gentle simmer, using a spatula to scrape the bottom of the pot and release any caramelized flavors that have formed.
6
Add the pork back into the pot, adding more water if necessary to ensure it's fully submerged in the sauce.
7
Then, lower the heat to a low simmer and cover the pot with a lid; let it cook for 3 hours, or until the pork is tender and the sauce has thickened to a rich, velvety consistency.
