Braised Beef Short Ribs
Ingredients
  • 4 pounds beef short ribs
  • salt and pepper to taste
  • 1 cup all-purpose flour
  • 1/2 cup olive oil
  • 2 cups chopped onions
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 2 tablespoons minced garlic
  • 1 tablespoon dried thyme
  • 3 large bay leaves
  • 1 cup red wine
  • 8 cups beef stock
  • 1/4 cup chopped fresh parsley
Instructions
1
Acquire the necessary components for preparation.
2
Sprinkle ribs with a pinch of salt and pepper, followed by a light dusting of flour to coat evenly.
3
Heat a generous amount of oil in a substantial cooking vessel over a moderate-high heat setting. Carefully sear ribs in the hot oil in small batches, replenishing the oil as necessary to prevent burning, 2 to 3 minutes per batch. Transfer the ribs to a serving plate.
4
Add sliced onions to the pot and sauté for 2 minutes, stirring occasionally. Add diced celery and carrots; sauté for 1 minute, ensuring they are tender but still crisp.
5
Enhance the flavor with a pinch of salt and pepper, then stir in minced garlic, thyme, and bay leaves. Allow the mixture to simmer for about 1 minute, releasing its aromatic properties.
6
Pour a suitable amount of wine into the pot and bring to a rolling boil while scraping the browned residue from the bottom of the pan with a wooden spoon. Add stock and bring to a rolling boil.
7
Gradually reduce the heat to a low setting and add the ribs, allowing them to cook slowly and tenderly.
8
Simmer for approximately 2 hours, or until the meat is easily detached from the bone and the sauce has thickened to a satisfying consistency.
9
Discard the bay leaves, then stir in some fresh parsley before serving.
