  • 1/4 teaspoon dried marjoram
  • 1 (16 ounce) can diced tomatoes
  • 1 (6 ounce) can tomato paste
  • 6 ounces water
  • 1 tablespoon lemon zest
  • 1 teaspoon sea salt
  • 1/2 teaspoon coarsely ground black pepper

Heat a generous amount of oil in a large cooking vessel over an intermediate heat setting. Introduce the onion and garlic into the saucepan, stirring constantly until they become soft and fragrant, approximately 5 minutes. Remove the mixture to a serving plate.

Next, add the beef shank to the saucepan and elevate the heat to an elevated level; cook until it develops a rich brown color, roughly 5 minutes on each side. Reintroduce the onion and garlic back into the pan, sprinkling a blend of thyme, oregano, rosemary, and marjoram over the beef. Add tomatoes to the saucepan, incorporating them seamlessly.

Pour water into the tomato paste container; thoroughly mix it around to dislodge any remaining excess paste, and add it to the saucepan. Incorporate lemon zest, salt, and pepper into the mixture; bring the contents to a rolling boil. Lower the heat to a gentle level, cover the saucepan, and let it simmer until the beef becomes incredibly tender, 1 1/2 to 2 hours.
