Ingredients
- 1 tablespoon extra-virgin olive oil
- 4 large heads baby bok choy, halved lengthwise, or more to taste
- 1/4 cup chicken stock
- 3 tablespoons soy sauce
Instructions
1
Preheat a skillet over medium-high heat until it reaches the ideal temperature, where the oil starts to shimmer but does not emit smoke. Add the bok choy and cook, rotating it occasionally, until it develops a light golden hue, approximately 2 minutes. Introduce the stock and soy sauce into the skillet, then cover it with a lid, lowering the heat to medium and allowing it to simmer until the bok choy becomes tender, roughly 5 minutes.
2
Transfer the cooked bok choy to a serving platter, reserving the liquid left in the skillet.
3
Bring the reserved liquid to a boil over medium-high heat until it has reduced by half, taking around 1 to 2 minutes. Pour the reduced liquid over the bok choy and serve.
