  • 1 1/2 cups buttermilk
  • 1/2 pound potatoes, peeled and grated
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • salt and ground black pepper to taste
  • 2 tablespoons butter, or as needed

Preheat the oven to a high temperature of 450 degrees Fahrenheit (230 degrees Celsius). Clean and prepare the potatoes by scrubbing them thoroughly, then poking several holes in each one using a fork. Arrange the potatoes on a baking sheet for even cooking.

Allow the preheated oven to reach its maximum temperature, then place the potatoes inside and bake for approximately 50 minutes to an hour, or until they can be easily pierced with a fork. Once done, remove the potatoes from the oven and let them cool down before peeling.

Use a fork to mash the cooled potatoes with buttermilk, creating a smooth and creamy texture. Add some grated raw potato to the mixture, along with flour, baking soda, salt, and pepper. Mix everything together until well combined.

Heat butter in a large skillet or griddle over medium heat, creating a gentle warmth. Using a spoon, scoop the potato mixture into the skillet and shape it into 3-inch thick cakes. Cook for about 5 minutes on each side, or until the cakes are golden and crispy, flipping them once during the cooking process.
