- 4 ounces unsweetened baking chocolate
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 eggs
- 2 teaspoons bourbon
- 1 teaspoon Madagascar bourbon vanilla extract
- 2 cups white sugar
- 1 cup chopped pecans

First, preheat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius).

Next, lubricate a 9x13-inch baking dish with non-stick cooking spray.

Then, melt butter and chocolate in the top of a double boiler over gently bubbling water. Stir constantly with a rubber spatula, making sure to scrape the sides of the bowl every few minutes, until chocolate has fully melted, approximately 5 minutes. Remove from heat and allow to cool completely, taking around 10-15 minutes.

Simultaneously, mix together flour, baking powder, and salt in a separate bowl using a sifting motion.

While the chocolate cools down, use an electric mixer or hand whisk to beat eggs in a separate bowl until they become almost pale. Combine bourbon and vanilla extract, then gradually add sugar until well incorporated. Stir in the chocolate-butter mixture, followed by the flour mixture until combined, ensuring to scrape down the sides of the bowl as necessary. Fold in pecans lastly.

Pour the brownie mixture into the prepared baking dish and bake in a preheated oven until the edges pull away from the sides of the pan, approximately 30-35 minutes. Remove from the oven and let cool completely on a wire rack.
