Ingredients
- 1 (8 1/2 pound) cooked bone-in ham (shank end)
- 40 whole cloves
- 1 cup firmly packed brown sugar
- 1/4 cup bourbon whiskey
- 1 1/2 teaspoons freshly ground black pepper
Instructions
1
Preheat the oven to its highest temperature setting, which is 325 degrees F (or 165 degrees C). Remove the skin and any excess fat from the ham, leaving a thin layer of fat about 1/4 inch thick. Using a sharp knife, create a diamond pattern on the surface of the ham by making shallow cuts. Insert whole cloves into the center of each diamond shape, ensuring they are securely in place.
2
Place the ham cut side down into a roasting pan and put it in the preheated oven. Continue baking until an instant-read thermometer inserted into the thickest part of the meat, avoiding any bone, reaches a temperature of 125 degrees F (or 52 degrees C). This process should take around 2 hours.
3
In a separate bowl, mix together brown sugar, whiskey, and black pepper until you achieve a smooth consistency. Increase the oven temperature to its highest setting, which is 375 degrees F (or 190 degrees C).
4
Baste the ham with one-third of the whiskey glaze, then return it to the oven. Continue baking until the internal temperature reaches 140 degrees F (or 60 degrees C), basting the ham with whiskey glaze every 10 minutes. If the ham starts to brown too quickly, cover it loosely with a piece of aluminum foil.
5
Once the ham is cooked to your liking, remove it from the oven and let it rest for 15 minutes before carving.
