  • 1 fresh red chile pepper, finely chopped
  • 1 shallot, minced
  • 1 (1 inch) piece fresh turmeric root, peeled and minced
  • 1 teaspoon kosher salt
  • 1 tablespoon brown sugar
  • 2 teaspoons olive oil
  • 12 chicken wings, separated at joints, tips discarded

Mince garlic and chile pepper with a knife, then combine them with finely chopped shallot in a bowl. Add turmeric and kosher salt to the mixture, crushing it together with a mortar and pestle or the flat side of a cleaver until well combined.

Place the resulting mixture into another bowl and stir in brown sugar and olive oil. Mix everything together until it's smooth and well incorporated.

Add the chicken wings to the marinade, cover them with plastic wrap or aluminum foil, and refrigerate for at least 1 hour to allow the flavors to penetrate.

Preheat your oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil, making sure it's large enough to hold the chicken wings.

Remove the chicken wings from the marinade, allowing any excess to drip off. Then, spread them out evenly onto the prepared baking sheet.
