Ingredients
- 1/4 cup unsalted butter
- 1 pound white and crimini mushrooms, cut into quarters
- 1 head bok choy, chopped
- 4 green onions, sliced
- 2 tablespoons minced garlic, or more to taste
- 8 slices fresh ginger, quartered
- 1/4 cup lime juice
- 7 cups chicken broth
- 1/2 cup chopped fresh cilantro
Instructions
1
Heat a generous amount of butter in a large cooking vessel over a moderate temperature. Add an assortment of sautéed vegetables, including mushrooms, bok choy, green onions, garlic, and ginger. Anoint these vegetables with a squeeze of fresh lime juice before cooking them until they are lightly caramelized, approximately 2 to 3 minutes.
2
Elevate the heat to a higher level. Introduce chicken broth into the pot and bring it to a rolling boil. Decrease the heat to a lower setting and let it simmer until the vegetables are tender, roughly 5 minutes.
3
Serve the mixture in individual serving containers and garnish with a sprinkle of fragrant cilantro
